Serves: 1-2 people (or as side dish for more)

Tips from Naz

  • You can replace the spinach with kale, but you will need to cook the kale 6 mins, and drain.

  • You can also create another dish called ataklt in a similar way. Simply replace the spinach with cabbage and add  small diced carrot.

Ingredients

200g spinach

1 tbsp vegetable oil

1 tsp of garlic

1 tsp of ginger

1/2 tsp of turmeric

Salt, to taste

Preparation

  1. Wash the spinach and cut into small pieces put aside separately (if you have baby spinach, no need to cut). Add the spinach bit by bit until they’re all wilted and cook for 3-5 minutes.

  2. Remove the spinach, drain by and reserve the spinach water.

  3. In a pan, add the oil. Cook the ginger and garlic for 1 minute.

  4. Cut the potatoes into medium size cubes and cook with the reserved spinach water,

  5. Add turmeric, salt and cook till its tender

  6. Add the spinach or serve as two separate dishes.
